Cutlets with leftover rice
Cutlets made with leftover cooked rice; because why waste it or make the usual fried/masala rice with it when you can make something different! I’ve also made these with leftover biryani. Yep!! It’s easier, because no spices, just mashed potato and egg to be mixed and smashed in with the rice (the masala of the biryani is enough to give it flavour).
Ingredients:
1 cup cooked rice
1 medium to large potato (boiled, peeled and mashed)
1 medium-sized onion (finely chopped)
1 green chilli (chopped)
Handful of chopped coriander leaves
1 pinch turmeric powder
1 pinch red chilli powder
½ tsp. cumin powder
½ tsp. coriander powder
¼ to ½ tsp. garam masala
1 egg
Breadcrumbs as required
Salt as required
Oil for shallow frying (if not air frying)
Method:
Mix all the ingredients together. The rice will also get mashed while you mix.
Shape the mixture into small to medium-sized cutlets.
Dip into the beaten egg and then breadcrumbs and shallow fry.
