Strawberry Lemon Frozen Yoghurt

10-15 strawberries
2 tbsp. lemon juice
1 tbsp. lemon rind (grated)
2 cups yoghurt (whisked)
½ cup sugar
2 tbsp. gelatin
3 tbsp. sweetened whipped cream.

Roughly chop the strawberries
Place in a non-stick pan and add sugar, lemon rind and lemon juice
Mix and cook till soft. Cool.
Heat half a cup of water in the microwave for 30 seconds. Add gelatin and mix well.
Take yogurt in bowl. Add cooked strawberries and cream and mix well. Add gelatin and whisk well.
Freeze till completely set.
Scoop and serve chilled.
